I was craving oatmeal chocolate chip cookies today but didn’t have the ingredients or the time to actually whip up a full batch from scratch. However, I did have about a bazillion packets of sugar-free cinnamon instant oatmeal in the pantry, so I decided to conduct an experiment.
Final consensus? AMAZING.
All I did was mix together 1/2 cup water and 2 packets of cinnamon instant oatmeal (I used Quaker) for the cookie mix. I spooned out six little dollops and added a dark chocolate chip to the top of each one, popped in the oven at 350 for eight minutes, and I had instant, semi-healthy cookies.
I’m going to keep these in mind the next time I’m in a pinch for breakfast! I’m infamous for spilling oatmeal, yogurt, or basically anything else you can eat with a spoon, all over myself in the mornings on a rush to work. I’ll have to keep this in mind so I don’t spend any more evenings scrubbing stains out of pencil skirts this fall. ;)
